			<content:encoded><![CDATA[<p></p><p>Putting the perfect ending on a Week of Local Eating the second Farm2Fork Festival will be Saturday, September 3<sup>rd</sup> in Riverside Park from 9 AM to 2 PM along with the Saranac Lake Village Farmer&#8217;s Market.</p>
<p>The Farm2Fork Festival will feature local “home cooks” creating dishes to taste using ingredients from the Farmer&#8217;s Market, such as tomatoes, leeks, zucchini, farm fresh eggs and kale.  Tickets are $10 for adults. Children under 12 are free. The ticket price includes a taste of what the home cooks have made (7 stations), a taste at the Artisan Beverage Bar, the hand cranked Ice Cream booth, a taste of fresh pressed apple cider and a taste at the Pickle Bar. At the Locavore Grill Harmony Hills Farmstead’s pork will be sold as Eat n’ Meet’s Pulled Pork and Italian Sausages on Lake Flour Cakery rolls. Locally made Sustain potato chips will also be featured at the Grill.</p>
<p>A recipe book featuring recipes used in this and last year&#8217;s festival will be available for purchase at a discounted price with a ticket purchase. Live farm animals will be on site, and there will be free 20 minute workshops on the stage in the park starting at 9am with “Grow your Own Garlic”. Other workshops that day include “Know your Beef”, and “Goats are Great!”</p>
<p>New York City&#8217;s Theater Group Dzieci will return to entertain during the Festival as Cirkus Luna, “the worst circus in the world”. Later that evening, they will present a “gypsy” performance of <span style="text-decoration: underline;">Macbeth</span> called “Makbet” at the Union Depot in Saranac Lake at 7:30 pm.</p>
<p>“We are excited to be expanding on the success of last year&#8217;s Farm2Fork festival, which attracted a crowd eager to taste the area&#8217;s local bounty in mouth watering dishes created by their friends and neighbors. “I know it served as inspiration to purchase vegetables from the Farmer&#8217;s Market that you might not have known how to cook, or how good it could taste,” said Gail Brill, Green Circle Founding Director, and organizer of the event.  We need to support our local farmer&#8217;s, so they can thrive here in the Adirondacks. As gas prices rise, the price of food shipped here has gone up, making locally grown food even more attractive to buy and eat. We hope these events introduce our local farm bounty to folks who are interested in trying new things in their kitchen.”</p>
<p>The Farm2Fork Festival is produced by the Adirondack Green Circle and is a project of Adirondack Sustainable Communities Incorporated (www.adksc.org) and the AuSable Valley Grange, the sponsor of the Saranac Lake Village Farmer&#8217;s Market. Other sponsors include North Country Public Radio, Adirondack Scenic Railroad and Sustain Chips.</p>
<p>The Adirondack Green Circle began 4 years ago, inspired by Barbara Kingsolver&#8217;s book about local food “Animal, Vegetable, Miracle”. With with close to 200 members the Green Circle&#8217;s mission of sustainable living resonates with many in the area. In addition to supporting local farms, they lead “Lost Arts Workshops” that teach forgotten skills, offers workshops on Ecological eating and Sustainable Living, collect recyclables from the 90 Miler Canoe Race, bring pertinent and ground breaking films to the community to raise consciousness, and work with area college and high school environmental groups.</p>

			<content:encoded><![CDATA[<p></p><p><span style="color: #003300;">Last year at the Farmers&#8217; Market in Saranc Lake, someone approached me at the Green Circle booth (we have a presence at the market every Saturday from June to October) and asked &#8220;Do you have a pickle booth here?&#8221; When I responded that &#8220;no, we did not&#8221;, they told me about the lines that form weekly at the pickle booth at their hometown farmers&#8217; market. Not being one to let a good idea escape, I thought, why not add a Pickle Booth to the tastings available at the Farm 2 Fork Fest this year? Pickling and preserving are a keen interest for many and this could be a way to bring that knowledge to the community.</span></p>
<p><span style="color: #003300;">The Farm2Fork Team is preparing early crops for pickling so we can offer a wide variety of treats at the Pickle Booth this year. Sugar Snaps are the first ones up. The recipe comes from the &#8220;Joy of Pickling&#8221; by Linda Ziedrich, but is adapted here:<br />

<p><span style="text-decoration: underline;"><span style="color: #808000;"><strong>Pickled Sugar Snaps</strong></span></span></p>
<p><span style="color: #003300;">1 1/4</span><span style="color: #808000;"><span style="color: #003300;"> cups white wine vinegar</span></span></p>
<p><span style="color: #808000;"><span style="color: #003300;">1 1/4 cups water</span></span></p>
<p><span style="color: #808000;"><span style="color: #003300;">1 tablespoon kosher salt</span></span></p>
<p><span style="color: #808000;"><span style="color: #003300;">1 tablespoon sugar</span></span></p>
<p><span style="color: #808000;"><span style="color: #003300;">1 pound sugar snap peas. stemmed and unstrung</span></span></p>
<p><span style="color: #808000;"><span style="color: #003300;">4 garlic cloves, sliced</span></span></p>
<p><span style="color: #808000;"><span style="color: #003300;">2 sprigs tarragon</span></span></p>
<p><span style="color: #808000;"><span style="color: #003300;">1 carrot, cut in half and julienned</span></span></p>
<ul>
<li><span style="color: #808000;"><span style="color: #003300;">In a non-reactive saucepan, bring to a boil the vinegar, water, salt and sugar stirring to dissolve the salt and sugar. Let the liquid cool.</span></span></li>
<li><span style="color: #808000;"><span style="color: #003300;">Pack the peas, garlic, carrots and tarragon into a one-quart jar. pour the cooled liquid over the peas and cover the jars with a non-reactive cap.</span></span></li>
<li><span style="color: #808000;"><span style="color: #003300;">Store the jar in the refrigerator for at least 2 weeks before eating. They will keep for several months.<br />

<p>The Adirondack Green Circle announces a Week of Local Eating August 27<sup>th</sup> through September 3<sup>rd</sup>, 2011. Kicking off the week is the first Chefs and Farmers:Taste the Adirondacks event showcasing the talents of our regional chefs and the bounty of local farms. This event is scheduled for Saturday, August 27<sup>th</sup> from 5:30 to 8 PM at the historic Union Depot in Saranac Lake. The second Farm 2 Fork Festival will be held Saturday September 3<sup>rd</sup> in Riverside Park along with the Saranac Lake Village Farmer&#8217;s Market. Local restaurants will feature food made from local ingredients during the week between the two events.</p>
<p>Chefs and Farmers:Taste the Adirondacks is the first ever “Taste” event in the Tri-Lakes region featuring chefs from local restaurants and catering companies. Each chef will partner with local farms to create a dish featuring locally grown ingredients. Attendees will have the opportunity to sample some or all of the dishes at the event. Tokens can be purchased for $1 each, tastings will range from $1 and up, depending on what is being served.</p>

<p>Critics say &#8220;As a piece of investigative journalism, it does a terrific job examining  the real price paid for nice plump chicken breasts, disease-resistant  soy beans and hamburger for all.&#8221;</p>
<p>It will change the way you look at food and introduce you to a week of local eating in Saranac Lake. Here&#8217;s the weeks line-up so far:</p>
<ul>
<li>Saturday, August 28th, <span style="color: #496100;"><strong>Saranac Lake Village Farmers&#8217; Market 9-2 in Riverside Park</strong></span>. The bounty is everywhere! The tomatoes are ripe, the melons are amazing, corn, peppers, greens, onions! Not to mention the Harmony Hills Farmstead beef and pork, Rehoboth Homestead&#8217;s chickens and farm fresh eggs that won&#8217;t kill you!</li>
<li>On Monday we will have a list of participating restaurants and what&#8217;s on the menu. Stay tuned!</li>
